Loaded Baked Potato Soup
All the flavors of a loaded baked potato, simmered into one hearty, soul-hugging soup. Simple ingredients, big comfort-just the way southern cooking ought to be. Get your spoon, the soups ready!
Loaded Baked Potato Soup
Serves 6-8
6-8 bacon slices, diced
2-TBSP reserved bacon grease or butter
1 small onion diced
2 tsp minced garlic
3- TBSP all purpose flour
2- c chicken stock
3-c milk
2- pounds of potatoes, peeled and diced
1-2 tsp salt
1- tsp pepper
1-1/2 c shredded cheddar cheese
1/2 c sour cream
Bacon, shredded cheese and fresh chopped green onions, for serving
First, cook the bacon and then remove it from pot and set aside. Drain off grease, but leave about 2 TBSP in the pot. Cook onion in the bacon grease for 4-5 minutes or until translucent, then add garlic and cook for about 30 seconds. Add in flour and cook for a minute or two, then deglaze the pot with the chicken stock, scraping up any bits on the bottom of the pot. Add in milk and stir. Add in potatoes and bring to a boil and cook for 15-20 minutes or until tender. Season with salt and pepper. Once the potatoes are done, stir in sour cream, cheese and most of the bacon pieces, save some for garnish. With a large spoon or ladle, serve the soup in a bowl, then top with bacon, more shredded cheese and chopped green onions and enjoy!!
